Judima Recipe: The Sacred Karbi Rice Beer of Assam With GI Protection
In 2021, Intellectual Property India awarded a Geographical Indication tag to judima — the traditional rice beer of the Karbi people of Karbi Anglong district in Assam, Northeast India. It was the first GI-tagged alcoholic beverage from Northeast India, a formal recognition that judima is not merely a drink but a product so specifically linked to a people, a place, a seed variety, and a starter culture that no imitation made elsewhere can legitimately carry its name. The GI protection covers three districts — Karbi Anglong, Dima Hasao, and Hojai — and restricts production to methods using the traditional Bora Saul (glutinous sticky rice) and Hitat (the herbal starter culture) that define authentic judima.
The GI tag matters because it represents institutional acknowledgment of what Karbi communities have known for as long as their oral tradition reaches: judima is irreplaceable. It cannot be made without Bora Saul, which grows on the specific soils and under the specific rainfall patterns of the Karbi hills. It cannot be made without Hitat, whose botanical ingredients come from forests that Karbi communities have managed for generations. And it cannot be made by anyone other than the Karbi people, whose fermentation knowledge — accumulated across centuries and encoded in practical skill rather than written recipe — is the invisible ingredient in every jar.
Who Are the Karbi People?
The Karbi (also called Mikir in older ethnographic literature, a name they now largely reject) are one of the principal indigenous peoples of Northeast India, with a population of approximately 700,000 concentrated primarily in Karbi Anglong, India’s largest district by area and an Autonomous District within Assam governed partly under the Sixth Schedule provisions of the Indian Constitution. This degree of autonomy reflects the Karbi Autonomous Council’s jurisdiction over local affairs, including the management of traditional practices such as judima production.
The Karbi people belong to the Tibeto-Burman language family and have strong cultural connections with other hill peoples of Northeast India — the Naga, the Mising, the Bodo — while maintaining a distinct cultural identity expressed in the Chomdok Ali (Karbi spring festival), the Rongker (clan worship ceremony), and the elaborate system of traditional governance encoded in the Karbi Anglong Autonomous Council Act. Judima is present at every significant Karbi cultural moment: offered to guests upon arrival, consumed at festivals, presented to the spirits during ancestral worship, shared at weddings as a bond between families.
The Hitat Starter: A Forest Pharmacy in Tablet Form
The defining technical characteristic of judima — the element that distinguishes it most sharply from other Northeast Indian rice beers — is the Hitat starter culture. Hitat is a tablet or cake made by the Karbi people from a mixture of dried, powdered plant materials including specifically identified medicinal species, combined with rice flour as a binding agent, formed into small balls, and air-dried or sun-dried for several days before use.
Research on the botanical composition of Hitat by Sharma, Singh, and colleagues documented at least 12–20 plant species involved in traditional Hitat preparation, including Ageratum conyzoides (bau kera nang in Karbi, known for antimicrobial alkaloids), Alpinia galanga (galangal, contributing kaempferol and galangin with both antimicrobial and flavor-enhancing properties), Costus speciosus (contributing diosgenin with documented antifungal activity), and multiple species of the Zingiberaceae family. Several of the plant species used have not been formally identified in scientific literature and represent traditional knowledge held exclusively by experienced Hitat makers — typically older Karbi women who inherit the knowledge from their mothers.

Bora Saul: The Rice That Makes Judima
Bora Saul (also written Bora Saol or Bora rice) is a glutinous sticky rice variety traditionally cultivated by the Karbi people on the specific soils of Karbi Anglong. It is a short-grain, opaque-white glutinous variety with a high amylopectin content (95%+ starch as amylopectin, versus 75–80% in most non-waxy rices) that gives it its characteristic stickiness when cooked and makes it particularly susceptible to rapid enzymatic starch conversion by the mold enzymes in Hitat.
Bora Saul already held a separate GI tag (awarded 2009, Assam Bora rice) before judima received its GI recognition, reflecting the recognition that this specific variety is a protected agricultural product. The GI tag for Bora rice covers its use in rice-based products including judima, and the two GI tags together protect the full agricultural and fermentation production chain from paddy to final beverage. This nested GI structure is unusual in Indian intellectual property practice and reflects the systematic effort by Karbi cultural organizations and state institutions to protect the entire production ecosystem rather than just the final product.
How Judima Is Made
The traditional production process is elegant in its simplicity and demanding in the quality of attention required at each stage. Every step reflects generations of optimized practice.
Traditional Process
Bora Saul is washed, soaked overnight, drained, and steamed in a traditional woven bamboo steamer (poitah) until fully cooked and translucent, with individual grains still distinct. The cooked rice is spread on clean banana leaves to cool to room temperature — speed of cooling matters, as excessively hot rice will kill the starter organisms, while excessively slow cooling increases the risk of airborne contamination. Hitat tablets are crushed to a fine powder and mixed evenly through the cooled rice at approximately 1.5–2% by weight. The inoculated rice is packed into bamboo tubes, sealed earthen pots, or traditionally prepared clay vessels, covered with banana leaves sealed in place, and left to ferment at ambient temperature for 3–7 days. Warmer conditions (28–32°C) produce judima in 3–4 days; cooler hill conditions (20–25°C during winter) extend this to 6–7 days.

Ingredients
- 500g glutinous sticky rice (short-grain white glutinous, as close an approximation to Bora Saul as available)
- 8–10g men ruou or similar Asian rice wine starter (Hitat is not commercially available outside Karbi communities; men ruou from Vietnamese grocery stores is the closest widely available approximation)
- Optional: a few slices of fresh galangal and fresh ginger added to the fermentation to approximate some of Hitat’s botanical complexity
- Banana leaves or parchment paper for lining
Method
Day 1: Cook the rice. Wash glutinous rice until water runs clear, then soak in cold water for 8–12 hours. Drain completely. Steam for 20–25 minutes until fully cooked and translucent. Spread on clean parchment or banana leaves and cool to 30°C or below.
Day 1: Inoculate. Crush starter to a fine powder. If adding galangal and ginger, mince finely and mix with the starter powder. Sprinkle evenly over the cooled rice and mix thoroughly with clean hands, ensuring complete coverage of every grain. The mixture should smell herbal and faintly yeasty.
Day 1: Pack and seal. Pack firmly into bamboo tubes, glass jars, or a ceramic crock, pressing to remove air pockets. Line the surface with banana leaf or plastic wrap pressed directly onto the rice. Seal loosely with a cloth to allow CO₂ escape.
Days 3–7: Ferment. Keep at 25–30°C. Liquid will begin accumulating at the bottom of the vessel by day 2 as enzymes liquefy the starch. By day 3–4, there should be clear fermented liquid with rice gradually settling into it. The aroma should be pleasantly herbal, faintly sour, and gently alcoholic — not sharp or acidic.
Serving. Traditional serving of judima uses a thin bamboo straw inserted directly into the jar, much like ruou can, with cold water added progressively to maintain liquid level. For home serving, decant the liquid by pressing the rice through cloth. Serve in small cups, diluted with cold water to preference. Judima is typically consumed at 3–7 days and does not improve significantly with extended aging.
Chomdok Ali: Judima and the Spring Festival
Chomdok Ali — the Karbi spring festival celebrated in February or March — is the annual event most strongly associated with judima in Karbi cultural consciousness. The three-day festival involves agricultural rituals for a good harvest, music and dance, inter-community celebration, and the central act of sharing judima with guests, neighbors, and deities. The festival’s public face is visible in colorful traditional dress, bamboo architecture, and the beats of Karbi percussion instruments; its spiritual core involves ritual judima offerings to Hemphu and Mukrang, the principal Karbi deities responsible for agricultural fertility and community wellbeing.
The Rongker ceremony — Karbi clan worship — involves judima offered to ancestral spirits in bamboo cups placed on ritual altars before being consumed by participants. This use of judima as a ritual medium connecting the living to their ancestors is echoed in similar practices across Northeast Indian tribal cultures, where fermented grain beverages serve simultaneously as food, social lubricant, and spiritual communication medium. The Karbi Autonomous Council has formally recognized Rongker and Chomdok Ali as protected cultural heritage, with judima production and consumption explicitly included in this protection framework.
Nutritional and Probiotic Profile
Judima produced at the traditional 3–7 day fermentation point contains viable lactic acid bacteria — primarily L. plantarum and Pediococcus acidilactici — in counts documented at 10⁶–10⁷ CFU/ml in microbiological studies of Northeast Indian rice beers. The fermentation process reduces the phytic acid content of the glutinous rice significantly, improving the bioavailability of iron and zinc. The medicinal plant compounds contributed by the Hitat starter — if using traditional Hitat — include compounds with documented antimicrobial, anti-inflammatory, and digestive-supportive properties that have been studied in ethnopharmacological research on traditional Northeast Indian medicine plants.
Singh et al. (2018), reviewing traditional fermented beverages of Northeast India in the Journal of Ethnic Foods, noted that the multi-species starter cultures used in traditional Northeast Indian rice beers consistently produced beverages with higher B-vitamin content than unfermented cooked rice, attributable to synthesis by the fermenting microorganisms during the 3–7 day fermentation period. Thiamine, riboflavin, and niacin were all elevated in fermented samples compared to unfermented controls.
Judima and the Future of Indigenous Fermented Beverages
The GI protection awarded to judima in 2021 represents a legal framework, not a guarantee of cultural survival. The challenge facing judima — like many indigenous fermented traditions — is not legal but social and ecological: young Karbi people increasingly live and work in Guwahati, Delhi, and other Indian cities far from Karbi Anglong; the forest plants required for authentic Hitat preparation require active forest management that depends on communities remaining on their land; and the Bora Saul variety requires cultivation to remain available, in competition with higher-yielding commercial varieties that provide greater immediate economic return.
Several Karbi cultural organizations and the Karbi Anglong Autonomous Council have developed programs to address these challenges: farmer subsidies for Bora Saul cultivation, documentation of Hitat botanical knowledge in collaboration with ethnobotanists, and promotion of judima in regional food tourism as an economic incentive for tradition maintenance. The GI tag makes these efforts legible to the Indian state and to international intellectual property frameworks that provide some protection against commercial appropriation.
Final Thoughts
Judima is among the most specifically rooted drinks in this series — defined not just by a technique or a grain but by the intersection of a specific rice variety, a specific forest-derived starter culture, and the specific knowledge of a specific people in a specific district of a specific Indian state. That specificity is not a limitation but its deepest virtue: judima tastes of Karbi Anglong, of the forests that produce Hitat’s botanical ingredients, of the knowledge encoded in the hands that pack rice into bamboo vessels.
