Making Soft Chhurpi at Home

Yak milk is unavailable outside Himalayan regions. Full-fat cow milk or goat milk makes a workable approximation — the texture and fat content will differ, but the technique is identical and the result is genuinely delicious as a fresh farmer’s cheese with Himalayan character.

Ingredients (makes approximately 200g soft chhurpi)

  • 2 litres whole milk, full-fat (goat milk preferred for closer flavor to yak milk)
  • 4–6 tablespoons lemon juice or white vinegar, OR 100ml previous-batch chhurpi whey
  • Salt to taste (optional)

Equipment

Instructions

  1. Heat milk to 80–85°C in a large pot, stirring frequently to prevent scorching. Do not boil.
  2. Add acidulant. Remove from heat and stir in lemon juice or vinegar slowly. The milk will curdle almost immediately — white curds separating from greenish-yellow whey. If using previous-batch whey, add at 60°C and allow 10 minutes for curdling to complete.
  3. Rest 5–10 minutes to allow the curds to fully separate and firm up.

  7. Unwrap and eat fresh, or dry further for a semi-hard version. Keeps in the refrigerator 5–7 days.

Making Hard Chhurpi (Smoked/Dried)

Hard chhurpi requires additional drying and ideally smoking after the pressing stage. This can be approximated at home:

  1. After pressing, cut soft chhurpi into small rectangular blocks (roughly 3cm × 2cm × 1cm).
  2. Option A — Oven drying: Place on a wire rack in an oven at 50–60°C for 8–12 hours, turning once. Continue daily for 2–3 days until very dry and firm. Final product will not reach the hardness of traditionally smoked chhurpi but will be shelf-stable for several weeks.
  3. Option B — Cold smoking: If you have a cold smoker or stovetop smoker, smoke blocks at under 80°C for 2–4 hours after initial drying. Hardwood chips (oak, cherry, or hickory) all work. The smoke adds both flavor and additional antimicrobial compounds.
  4. Store in a dry place. Well-dried hard chhurpi keeps for months at room temperature if humidity is low.

How Chhurpi Is Used in Himalayan Cooking
