How to Make Qurut: Step by Step

Day 1: Make the Yogurt (Active time: 30 minutes; passive: 8–12 hours)

Heat your milk to 82–85°C (near boiling but not boiling — look for wisps of steam and small bubbles at the edges, not a full rolling boil). Days 3–9: Drying

In the UK or northern Europe, a sunny windowsill works; or use an oven on its absolute lowest setting (50–60°C) with the door slightly ajar as a drying oven.

Turn the pieces once or twice daily. After 1–2 days, a skin forms. After 3–4 days, the surface is hard but the interior is still slightly soft. After 5–7 days in good sun (or 7–10 days in less ideal conditions), the qurut should be uniformly hard throughout — no give when pressed, no moist interior when broken open. Dried qurut is very light compared to fresh chaka — a sign that most moisture has left.

What Everyone Gets Wrong the First Time
