Tonto Recipe: Uganda’s Traditional Banana Beer of the Baganda Kingdom

What Is Tonto?

Method
Step 1: Extract banana juice. At home, use your hands to mash the peeled bananas and plantains together in a large bowl until completely broken down. No blender — hand mashing preserves the larger fiber particles that traditional straining removes and that blending would fully incorporate. Add warm water to facilitate juice release and mix thoroughly.
Step 2: Strain. Line a strainer with coarse cloth or banana leaves and press the banana mash through, extracting as much juice as possible while leaving behind coarse fiber. The resulting liquid should be a thick, pale-yellow banana juice. Discard or compost the fiber.
Step 3: Add sorghum. Stir the lightly toasted sorghum flour into the banana juice. Mix thoroughly to combine. The mixture will be slightly thick and opaque — this is correct. The sorghum will begin releasing its enzymes into the banana juice immediately.
Step 4: Ferment. Pour the banana-sorghum mixture into a large fermentation vessel. Cover loosely with a cloth or loose lid that allows gas to escape. Keep at room temperature (ideally 25–30°C). Fermentation should begin visibly within 8–12 hours in warm conditions — look for small bubbles rising and a progressive sourness developing when you smell or taste the mixture. Traditional tonto is consumed at 24–48 hours, when it is still slightly sweet, gently fizzy, and has reached 3–5% ABV. At 72 hours it will be more sour and more alcoholic. Taste from 24 hours onward and drink when it reaches your preferred balance.
Step 5: Serve. Pour or ladle tonto through a coarse strainer into cups or a serving vessel. Tonto is consumed at room temperature or slightly chilled, often with dried strips of beef (kabalagala) or roasted groundnuts as accompaniment. It does not improve with extended aging — consume within 3–4 days of initial fermentation.
Tonto in Buganda’s Social and Ceremonial Life
The Baganda Kingdom (Buganda) is one of the oldest and most sophisticated political entities in sub-Saharan Africa, with a documented history stretching back to the 14th century CE and a system of governance — the lukiiko (parliament), the kabaka (king), and a structured hierarchy of chiefs — that governed the Lake Victoria basin long before European contact. Tonto featured in every layer of this social structure.
Royal court ceremonies at the lubiri (palace) included tonto serving as a marker of status and generosity. The Kabaka’s hospitality was measured partly in the quality and abundance of tonto offered to visiting chiefs and dignitaries. At the community level, the bulungi bwansi tradition — communal voluntary labor for community projects — was always concluded with tonto shared among all participants, the drink serving as both reward and seal of communal participation. At the family level, a household that brewed and served tonto generously was considered prosperous and hospitable; a household that could not offer tonto to guests was considered impoverished regardless of other material circumstances.

Mbege uses Chagga-specific banana cultivars from Kilimanjaro’s volcanic slopes (a different agro-ecological environment from Buganda’s Lake Victoria basin) mixed with eleusine finger millet malt rather than sorghum. The Chagga process involves a separate malting stage and a longer fermentation. The flavor profile of mbege is more complex and more tart; tonto is sweeter and more directly banana-forward. The cultural contexts are also distinct: mbege is deeply tied to Chagga ceremonial life on Kilimanjaro, while tonto is the social lubricant of the Buganda Kingdom’s densely populated, politically sophisticated society around Lake Victoria.
