The resulting beverage, chicha de quinoa, is one of the Andes’ oldest fermented traditions, predating the Spanish conquest by millennia and surviving it by a stubbornness rooted not in nostalgia but in the fact that no imported fermentation tradition has produced anything better suited to the altitude, the agriculture, and the ceremonial requirements of Andean life.

Most people who encounter the word chicha think of chicha de jora — the corn-based fermented drink that the Inca distributed throughout their empire through a state-controlled production system. But chicha is not one drink. It is a category: any fermented beverage based on a starchy Andean crop, produced through enzymatic conversion of starch to fermentable sugar and subsequent wild fermentation. Chicha de jora uses germinated (malted) corn. Chicha de quinoa uses quinoa — a grain with its own unique chemistry, its own fermentation challenges, and its own flavor profile utterly distinct from the corn version.

What Is Chicha de Quinoa?

Chicha de quinoa is a fermented beverage made from quinoa (Chenopodium quinoa Willd.) that has been either germinated (malted) or cooked and then inoculated with wild microorganisms, then fermented for 2–7 days. The finished product is low in alcohol — typically 2–6% ABV — slightly cloudy, mildly sour, with a distinctive earthy, faintly bitter flavor contributed by residual saponins (quinoa’s natural soap-like coating compounds that must be partially but not entirely removed before fermentation).

The color ranges from pale cream to golden-yellow depending on the quinoa variety used. White quinoa varieties produce a paler chicha; the red and black quinoa cultivars of southern Bolivia and northwest Argentina produce deeper-colored, more complex-flavored versions. The most prized chicha de quinoa for ceremonial use in some communities comes specifically from the black quinoa varieties grown in the Potosí and Oruro departments, whose pigments (betalains) contribute both color and antioxidant compounds to the fermented beverage.

Quinoa: The Grain of the Altiplano

Quinoa’s nutritional uniqueness — a complete protein containing all nine essential amino acids, including lysine, which is deficient in most grains — made it the primary protein source for altiplano communities for whom meat was scarce. Its ability to grow at 3,000–4,000 meters elevation in thin, poor soils with minimal rainfall made it ecologically essential. The Inca called it chisiya mama, “the mother of all grains.”

Quinoa’s chemistry creates specific challenges and opportunities for fermentation. Its saponin coating — a bitter soapy compound produced as a natural insecticide — must be reduced before consumption or fermentation. This is achieved by washing and soaking, which removes water-soluble saponins, and by a malting/germination process that further degrades them. Traditional producers also use the method of rubbing dry quinoa between hands or against stones (dry milling) to strip the outer saponin layer before washing. Modern commercial quinoa is typically pre-washed (labeled “pre-washed” or with a saponin content disclosure), simplifying the process somewhat.

Quinoa’s starch is unusual compared to corn or wheat — it contains primarily amylopectin (approximately 75–80%), making it highly digestible and susceptible to rapid enzymatic conversion once germination activates amylase enzymes. This means that properly malted quinoa ferments more quickly than malted corn, producing a functional chicha in 3–4 days rather than the 7–10 days typical of chicha de jora.

The Ritual Context: Pachamama and the Agricultural Calendar

Chicha de quinoa is inseparable from the Aymara ceremonial calendar, particularly the rituals associated with Pachamama (Earth Mother) and the agricultural cycle. The ch’alla — a ritual offering of chicha poured onto the earth or sprinkled on objects to be blessed — is performed at every significant occasion: before planting quinoa, before harvesting it, at the beginning of construction projects, at births and deaths, at New Year celebrations including Machaq Mara (Aymara New Year, celebrated at the June solstice).

The specific use of chicha de quinoa rather than chicha de jora for certain ceremonial purposes reflects the grain’s sacred status. Quinoa was associated with Aymara deities specific to the altiplano, and chicha made from the same grain that sustained life at altitude carried a spiritual charge that corn-based chicha, associated with lower-altitude Quechua culture, did not entirely share. The colonial Spanish administration understood this distinction well enough to specifically target quinoa cultivation in certain periods as a means of weakening traditional religious practices — the same motivation that drove attacks on basi production in the Philippines and pozol production in Chiapas.

Juan de Matienzo’s 1567 Gobierno del Peru, one of the earliest detailed Spanish administrative documents on Andean society, noted the centrality of chicha production to community social organization and the complexity of the ceremonial obligations attached to it. Spanish attempts to replace chicha with European wine in the context of Catholic sacramental practice largely failed — chicha remained the drink of Andean community life, too deeply embedded in agricultural, social, and spiritual practice to be displaced by an import that could not grow at altitude.

How to Make Chicha de Quinoa

Two main methods exist for producing chicha de quinoa: the germination (malting) method, which activates the grain’s own amylase enzymes to convert starch to fermentable sugar; and the masticating method, which uses salivary amylase to achieve the same conversion. The masticating method is the most traditional (and is the method associated with specific ceremonial chicha in many Andean communities) but is impractical for home production at scale. The germination method is equally traditional, widely documented, and fully appropriate for home production.

Ingredients

  • 500g whole quinoa, white or red (pre-washed preferred, or rinse thoroughly until water runs clear)
  • 2–3 liters of water
  • Optional: 1 cinnamon stick, 2–3 cloves, dried fruit peels (quince or apple) for flavoring
  • Optional: 2 tablespoons of a previous batch of chicha or a tablespoon of sourdough starter to assist initial fermentation

Method

Days 1–3: Malting the quinoa. Rinse quinoa very thoroughly under cold running water, rubbing the grains between your palms, until the water runs completely clear and there is no soapy foam — this removes saponins. Soak the washed quinoa in cold water for 12–16 hours. Drain completely. Spread on a clean, damp cloth-lined tray. Cover with another damp cloth. Keep moist by rinsing with cool water twice daily and at room temperature. Shoots will appear at the germ end within 2–3 days. The optimal germination point is when shoots are 2–3mm long — at this stage amylase enzyme activity is at maximum and starch conversion will be most efficient.

Day 3: Cook and mash. Combine the germinated quinoa with 2 liters of water in a large pot. Bring to a simmer over medium heat, stirring frequently, and cook for 20–25 minutes until the quinoa is fully soft and the mixture has thickened to the consistency of thin porridge. The heating process gelatinizes the remaining starch, making it accessible to enzyme conversion. Remove from heat and allow to cool to 35–40°C.

Day 3: Begin fermentation. Add cinnamon, cloves, or dried fruit if using. Add starter chicha or sourdough starter if available. Transfer to a clean, non-reactive fermentation vessel. Cover loosely with cloth and keep at 20–28°C (room temperature at altitude in Bolivia; slightly warmer in most home environments). Stir once daily.

Days 4–7: Ferment to taste. Fermentation is visible from day 1–2 as small bubbles rise from the bottom of the vessel. By day 3–4, the chicha will be mildly sweet, lightly sour, and faintly alcoholic — this is the traditional drinking point for fresh ceremonial chicha. By day 5–7 it will be more sour, more alcoholic, and less sweet. Taste daily from day 3 onward and consume when it reaches your preferred balance.

Straining and serving. Strain through cheesecloth or a fine mesh strainer, pressing the quinoa solids firmly to extract maximum liquid. The strained chicha should be pale golden, slightly cloudy, and faintly fizzy. Serve in clay cups or regular cups at room temperature or lightly chilled. Traditionally a small amount is poured on the ground as an offering to Pachamama before drinking. The unstrained, full-grain version — consumed as both food and drink — is more nutritious but thicker and more challenging to drink in quantity.

Flavor Profile and Food Pairings

Chicha de quinoa at 3–4 days has a flavor that surprises people expecting something similar to chicha de jora. The quinoa character is earthy, slightly nutty, with a faint bitterness from residual saponins that is not unpleasant — it functions like the tannins in a natural wine, providing structure and complexity beneath the sour-sweet primary notes. The body is lighter than corn chicha, more similar to a thin sour beer. Red quinoa varieties produce chicha with a slightly more complex flavor and a warm golden color; black quinoa produces a more deeply flavored, more astringent version that most producers dilute with additional water before serving.

Traditional pairings on the altiplano include charque (dried llama or alpaca meat), chuño (freeze-dried potatoes), and roasted quinoa kernels — the same agricultural staples that the chicha fermentation transforms into beverage form. Outside this context, chicha de quinoa pairs well with any earthy, savory food: roasted root vegetables, lentil dishes, aged cheeses, smoked fish.

Nutritional Profile of Fermented Quinoa

The fermentation of quinoa produces nutritional improvements over cooked unfermented grain. Lactic acid fermentation reduces phytic acid content by 30–50%, significantly improving the bioavailability of quinoa’s already-impressive mineral content (iron, zinc, manganese, phosphorus). Research published in the Journal of Cereal Science by Repo-Carrasco-Valencia and colleagues documented that traditional fermentation of Andean grains including quinoa produced substantial reductions in antinutritional factors while maintaining or increasing available amino acid content.

The saponin reduction achieved through soaking, washing, and germination that precedes fermentation is also nutritionally significant: saponins at high concentrations can interfere with intestinal absorption and cause intestinal irritation. The multi-step processing traditional to chicha de quinoa production is functionally a sequential antinutrient reduction process that Andean communities developed empirically over generations.
